Bread with Dobra Jasna mix
Homemade bread with Dobra Jasna mix - made from single-grain flours, with high nutritional value.
Dobra Jasna is a mix with a high content of single-grain flours. As a result it has high nutritional value and handles souring and yeast-free fermentation much better than many similar mixes on the market.
Ingredients
- 1 kg of mix: Dobra Jasna
- 20 g salt
- 20 g sugar
- 40 g oil
- 40 g yeast
- 1 litre water
Method
- Put all the ingredients in a bowl and mix thoroughly: 2 minutes on low speed, then 4 minutes on high speed.
- After kneading, transfer the dough into tins, filling them to about 1/3 of their height.
- Cover the tins. A clear perspex sheet works well - you can see the dough rising through it without having to uncover it.
- After about 40-50 minutes, when the dough has risen, remove the cover and dust the surface with Sourdough feeding mix. Dip a knife in oil and score the dough along the tin.
- Put the bread into the preheated oven. Before baking, place a metal dish of water in the oven. Steam is especially important during the first 10 minutes or so of baking - it softens the crust so the loaf can rise properly.
- Bake at about 220°C for about 40 minutes. Enjoy!
